Prepare for the evening

Choose two or three recipes to keep the bar manageable. Have clean glasses, plenty of ice, a jigger and a shaker ready. Chill sparkling wine and add it at serving time; never shake it with the other ingredients. For the Rosemary Gin Fizz, use a ready-made rosemary sugar syrup or prepare your preferred syrup ahead of time.
